Besides the extra protein and fiber, the biggest benefit in soy milk are the isoflavones. Sounds complex, but basically isoflavones are actually chemicals very similar to the hormone estrogen. Soy milk does have a bit more fat than 2% cow's milk, but none of the nasty cholesterol (of which there is approximately 20mg per cup, in 2% cow's milk). .... read more>

I actually use vitasoy milk in all of my recipes. For baking and making omeletes I use the lightblue soy, for my coffee and tea, my favourite is red vitasoy. I haven't tried the rice milk in any recipes, I use rice milk for my cereals.
Go on, spread your wings and substitute your cows milk for vitasoy.in baking you won't know the difference.
